Hi Rebecca :)

Having recently been to London twice and having lived just north of Amsterdam most of my life I think I might be able to offer some suggestions:

For London I got one of those Lonely Planet guides and found it very helpful. Personally though, I really enjoyed The British Museum. If you like ancient history and culture it's a must see. The National Gallery on Trafalgar Square has some great paintings, as does the Tate Britain. Wear a gas-mask if you go walking around Westminster during rush hour. Eating-wise I recommend "1492" near the Fulham Broadway station.

I don't really eat in Amsterdam much, but as far as sights go The Van Gogh museum is great. They tend to have very good exhibitions and obviously the permanent collection is worth a look. I've yet to go see it but I understand the Anne Frank house is also definitely worth seeing. You'll find bikes the most convenient means of getting around the city and you should be able to rent one somewhere. If you like beer I recommend Grolsch or Hertog Jan over Heineken.

Make sure you check out Forbidden Planet while in London. And there was a great Chinese place called Poons if I remember correctly.
